[Magdalen] Christmas pudding

Steamed Carrot Pudding



Combine and mix well

Chop the dried fruit, add 2 T brandy and let soak.  Add the grated
carrot and apple and toss.

1 cup grated carrots

1 cup grated apple

2T brandy

1/3 pound golden raisins

Handful of dried apricots, chopped

1/2 cup chopped crystallized ginger

1 cup chopped nuts, I use pecans





Combine and mix:

1 egg

2/3 cup buttermilk



Combine in a second bowl and mix well:

1.5 cups flour

1 cup sugar

1 tsp baking soda

1 tsp salt

1/2 tsp cinnamon

1/2 tsp allspice

1/2 tsp nutmeg







Grease a pudding mold.  Have a large pot of water boiling.  Place a
rack in the bottom to support the pudding mold.



Stir wet ingredients into the dry ingredients and mix well.  Pour into
the mold and secure the lid.  Place the mold in the pot with water at
least halfway up the sides of the mold. Put a lid on the pot and keep
at a low boil for about 2 hours.  Don't let the water level drop much
below half.  Add boiling water as needed.   Remove the mold, take off
the lid and let it cool till you can loosen the pudding from the mold.



This can be done one day to one week ahead of time to let the flavors blend.



Serve with any of these:

hard sauce

lemon sauce

ice cream

whipped cream
