There is the famed 40-part motet by Thomas Tallis called
"Spem in Allium".
 
I have a recording of it somewhere.  It's one of those esoteric
motets that one sees programmed occasionally as a novelty
by large, often professional choirs.  Obviously, your average
or even very good church choir does not have the resources
to sing a 40-part motet.
 
I've been in choirs that have been able to handle 6 or 8 parts
without batting an eye, but not 40 parts.
