Red Snapper is indeed a fish and very tasty, but the meat in Snapper Soup
is Snapping Turtle.>>>>

The common snapping turtle of the Eastern USA is often seen in the lakes
of the Upper Midwest, and these turtles occupy a position there akin to
alligators and sharks elsewhere.

They are ferocious, and formidable in appearance, particularly when
old and very large and woe to the pet dog who decides to investigate
one of them on land.

OTOH, they are simply not a problem for humans in the water, and
shy away from us completely.

Nonetheless, they have a characteristic look breaking the water surface,
just like a shark has, and the sighting of one in a swimming area is enough
to clear out the swimmers. They are the terror of small fish, amphibians,
and other reptiles in the water.

They are top of the food chain in these lakes, and fear only mankind.
