What do you mean by a convection oven?  Whether its heated by gas or 
electricity an oven (unless it's a microwave oven) heats the air in it 
through convection currents and that cooks the food. Fan-assisted ovens 
make that more efficient and quicker by moving the air around more 
efficiently.
