Hmm. If no one will eat it, then I suppose it has no expiration date, no
matter what?

Some of the mom-and-pop places I ate at when I was in Germany had as part
of their cuisine sauerkraut.  It was always fantastic.

A good German restaurant will have great sauerkraut.

On the other hand, my ancestors were German immigrant dirt farmers, and the
recipe they handed down for sauerkraut took the "sauer" very very very very
seriously.  Goodness. [Or perhaps I should use a different word there.]
