I wouldn't use mayonnaise, too flat & greasy.

vinegar, olive oil, Dijon mustard and dill CHECK
yogurt, Dijon mustard, garlic and black sesame seeds CHECK
toasted sesame oil and lime juice and cayenne pepper CHECK

and any of those with cabbage makes a fabulous bed for poached salmon
