[Magdalen] farro salad

This morning's accomplishment:
cook one cup of farro in salted water, drain
in a heavy skillet
1/4 cup olive oil
2 large shallots, coarsely chopped
a box of mushrooms, cleaned & sliced
when the shallots are translucent, add
4 Garlic cloves, minced
cook less than a minute
add 1/4 cup pine nuts
a shake of soy sauce
a shake of vinegar (I usually use champagne or sherry)
several shakes of ground white pepper
mix together
then add the drained farro, and mix again
refrigerate, covered, for a day
if to be served with ham, add raisins
if to be served with pork, add dried cherries
if to be served with lamb, add mint leaves
or whatever you have that looks interesting
scallions are nice, too
