I believe the rules are that the bread must be of wheat origin (such  as
rice will not do), and wine of grapes only.
 
It's also clear that communion in one kind is recognized as complete
communion by both RC's and Anglicans so even if one has a gluten
intolerance or is an alcoholic who stays away from alcohol, there
should be complete satisfaction with the communion under one kind.
 
Now, if one has a problem with grape-wine and with gluten, THAT is
