These sorts of fermented foods have been made for over a thousand years - 
food poisoning from them, while possible, is very rare. As noted by others, 
the good bacteria involved create conditions (mainly high acidity) which 
kill the bad bacteria. Many of us here have done canning of jams, tomatoes, 
etc., which is no less "dangerous". As long as one follows directions and 
doesn't consume food which doesn't look or smell right, you'll be fine.
