What you say is true, Chad.  Butttt..
      While I've gone through years of making my own yogurt, several 
quarts in a batch, carefully controlling the temp to within 5 degrees of 
115; and done home canning, jellying and jamming and pickling, well 
acquainted with the theory from cookbooks, everything from Joy to a lot 
of miscellaneous "hippy""Organic Movement""home gardening"and USDA 
publications; and yeast baking, carefully coddling the yeastie beasties; 
  I've also seen home-canned goodies, and leftovers in the fridge, go 
very bad.  I've seen the warnings about home-canning low-acid varieties 
of tomatoes.  Having at least a couple of brains about me, I haven't 
tested those bad batches on myself, or even _tasted_ them, just going by 
appearance, such as bubbles where there should be bubbles.  I'm aware 
that botulism and ptomaine can be lethal.
    Like Mike, I have no idea (even less than Mike does) how these 
kimchi deals are _supposed_ to taste. (I know nothing about kimchi, but 
I've heard the expression, "in deep kimchee", which sort of imples from 
context, "not very good".  I always had the impression from that 
expression that "kimchee" was a euphemism or Asian-language word for 
"shit").
     Nevertheless, the original remark was more of a wisecrack than 
serious, since I _was_ considering trying this concoction.
