I think a lot of the more exotic cheeses are made in Wisconsin,  including
brie and camembert, so there must be SOME domestic market for these
products.
 
So far, the big cheese place in my home town (_www.burnettdairy.com_ 
(http://www.burnettdairy.com) )
doesn't make any soft cheeses, though I'm sure they could make
