I have a friend who makes something he calls cashew cream, which he uses on
cereal and in soups. He whips cashews and water in his super-powerful
blender, then drains the mixture through cheese cloth.
Can be sweetened or not, cooked down or thickened with ... I think he uses
arrowroot or agar. To replicate the taste and texture of cow's milk, he
leaves it liquid-y and adds a little sugar and a tiny bit of vinegar.
