[Magdalen] Cooking advice - steamed pudding

...wondering (it was not keeping me up last night) if regular beef fat is the same texture,flavor etc as the perfect fat near the organs, as described. I also wonder if if the organ fat is rendered - the recipes and other direction I read in recipes called for grating it - once rendered, even if chilled, it seems as though it wouldn’t grate the same as if it was grated in its natural chilled state.

Lynn, renderer of chicken fat for liver pate, and who once, long, long ago rendered A LOT of beef fat to make soap...

Suet is just beef fat. The meat department in any grocery store will sell
you some, I’m sure, and probably very cheaply. Lard is pork fat, suet only
beef. As Lynn said, you’ll probably have to render it yourself (melt it
down and strain it), to get the odd small chunks of meat out of it.
